Asparagus salad with Bratwurst

Ingredients for 4 persons:
800 g subtle green asparagus
Salt
a dash sugar
3 tablespoons walnut oil
2 tablespoons white wine vinegar
Black pepper from the mill
1 tablespoons oil
20 Original Nuremberg Bratwursts

Wash and drain the asparagus and cut off the wooden ends. Cook it al dente with salt and a dash of sugar. In the meantime whisk oil and vinegar for the sauce. Heat oil in a pan and fry the sausages in it. Lift the asparagus off the boiling liquid. Puree the lower third of the asparagus in a kitchen aid and stir it with the dressing.

Distribute the Wurst on plates. Arrange the asparagus decoratively beside it and pour some dressing on it. Optional you my serve some additional dressing in a sauce boat. Fresh Pretzels with sesame or sunflower seeds go very well with this dish.

Tipp: There's no need to peel green asparagus
